I love a warm bowl of smoky black beans, and this Chipotle burrito bowl is deeply seasoned without being over-the-top spicy. My husband doesn’t love super spicy food, but I do. If you’re like me, add a healthy dose of hot sauce to your Chipotle burrito bowl right before serving. YUM!

When I want to eat vegetarian foods, I always feel safer cooking them at home. You never know what kind of grease restaurants actually use or whether your foods will be contaminated with others around it.

Sometimes, I just get a craving for Chipotle! So, I decided to crack my favorite thing from there – the burrito bowl – and learn how to make an even better version at home!

This copycat burrito bowl recipe is so full of flavors that you won’t miss the restaurant version one bit.

These smoky black beans are delicious, but they’re also packed with nutritional value. Beans offer both protein and fiber, which is a rare and extremely healthy combination. In fact, beans like the black beans in this chipotle burrito bowl have been shown to prevent diabetes and heart disease.

Black beans, in particular, have a good combination of nutrients for bone health. They’re rich in protein, iron, and chromium.

For the recipe below, you can use BPA free canned beans or choose to cook your beans from dried. Either way, this recipe turns out deliciously!

Here are some of the tastiest (and healthiest) ingredients to use in your vegetarian burrito bowl.

  • Tomatoes
  • Cucumber
  • Black Beans
  • Carrots
  • Red Onions
  • Avocado
  • Brown Rice

Instructions

There really is a best way to build your burrito bowl. You want to layer all of the ingredients so that they create the ultimate crunch and flavor combination.

You can use whatever veggies look good at the store, but here’s how we did our burrito bowls:

  • Start with a bed of chopped lettuce or spinach.
  • Add the rice and beans (see Chipotle Black Beans recipe below).
  • Top with veggies from your rainbow plate.
  • Add avocado and chopped scallions.

Everyone gets to pick and choose what goes into their bowls, but since all of the offerings are fresh and healthy, they’re getting a nutritious meal no matter what they select. Yay!

I’d add Spanish rice to mine. Oh, and corn. And peppers. Wait, I also need to douse it with some spicy hot sauce.

Man, I can go on…and on….this is making my mouth water. I love Chipotle’s Burrito Bowl so this is such a great idea for tonight!

How do you store a leftover burrito bowl?

If you used fresh lettuce in your burrito bowl and mixed it all together, there just isn’t going to be a way to save it without the textures all changing. I suggest storing each of the ingredients separately and then mixing together just enough that you think you will eat. Store the leftover ingredients in airtight containers in the refrigerator for up to a week.

How do you keep avocados from going brown?

This is my favorite hack! Keep the pit inside the avocado (even if you already put the chopped avocado in a bowl). Then, wrap it up tightly to keep the air off of it. This will slow down the color-changing process by a few days.

Is this recipe keto-friendly?

If you are going to use rice, then this is not a keto-friendly meal. All you have to do to make this keto-friendly is replace the rice with cauliflower rice, and don’t use any corn.

Ingredients

  • 2 tablespoon olive oil
  • ½ red onion chopped
  • 2 cloves garlic minced
  • 2 cups cooked black beans
  • ½ cup veggie broth
  • ½ teaspoon cumin
  • ½ teaspoon chipotle chili powder

Burrito Toppings

  • Avocado
  • Tomatoes
  • Scallions
  • Brown Rice
  • Cilantro
  • Chopped Cucumbers

Instructions

  • Heat the oil in a small saucepan on medium, and saute the onions and garlic until the onions turn translucent or for 2 minutes.

  • Add the remaining ingredients, bring to a boil, then reduce the heat and simmer, stirring occasionally until the liquid reduces by half. This will take about 10 minutes.

  • Serve with your favorite burrito fixings!

If you want to make this a keto-friendly recipe, replace the rice with cauliflower rice.
